After my clinicals today, headed out to Shin-Sen for some ramen with the mates. This was my first try at legit ramen besides your .99 cup noodles, so I was uber excited for some soupy goodness. We went to the Fountain Valley location which is specializes in "Hakata Ramen". Hakata Ramen according to Shin-Sen-Gum:

 "Hakata ramen originated in Hakata city located north west of Kyushu . The main characteristic of Hakata ramen is the white, thick soup that is made from pork bones, also called Tonkotsu (pork bone) soup/ramen. Some of the other differences in character it has from other types of ramen are thinner noodles, and the simple decorative toppings of cha-shu , chopped scallions, red colored ginger, and sesame seeds."

Other locations may specialize in Shabu Shabu (i live for this), Yakitori, Hakata Mizutaki, and more. I ordered the pork soup base normal with extra chas-shu for my ramen.The soup base was good and not too oily. It tasted along the lines of a miso broth. The noodles and chas-shu were perfection. I think next time I'll lessen up on the ginger, not to big of a fan of it. But none the less it was delicious. 

The dining ambiance was great as well. With the chef working in site and waiters shouting out phrases in Japanese during service, just made the experience a bit more authentic.
